How to Tell a Pizza Was Made After You Ordered It
Some kitchens bake ahead and reheat. Here is what arrives differently when yours was made from scratch.
A busy kitchen has a choice. Bake ahead and hold it warm or start when the order comes in. The first is faster. The second is better. You can tell which one you got.
The signs
Steam in the box is the first one. A pizza made to order steams when you open it and the cheese still moves. Held pizza has already released its steam into the box, which is what makes the base go soft underneath.
The second is the wait itself. A kitchen that starts when you order takes longer at the counter and less time in the box. If food appears within two minutes of ordering, it was waiting.
Why it is worth the wait
Reheating drives water out of the base. That is what turns a light crust dense and it cannot be undone. A few extra minutes at the start is what buys you a base that is still good when you get to the last slice.
