Pizza and Manakeesh in One Order
One table, four different cravings. Why one oven doing both changes what you can order.
Ordering for more than two people is usually a negotiation. Someone wants pizza. Someone wants something Levantine. Normally that means two orders from two places, arriving at two different times.
One oven, two things
Pizza and manakeesh are not as different as the menu makes them look. Both are dough, stretched flat, baked hot and fast. What changes is what goes on top and how long it stays in. A kitchen set up for one can do the other properly.
Most pizza places in Ajman do not sell manakeesh. Most bakeries do not sell pizza. We do both, out of the same oven, in the same order, arriving at the same time.
What to put together
A large pizza and two or three manakeesh covers a family without anyone compromising. Zaatar and cheese manakeesh are the safe ones. Add a spinach or a muhammara for the person who wants something without meat. Syrian pastries come in packs and travel well.
